Enchilada Mixed peppers, onions and chicken, cooked in Cajun spices and wrapped in a flour tortilla, topped with enchilada sauce and grated cheese and then lightly grilled. Served on a bed of rice. Swap chicken for Quorn (v) Club Sandwich A classic club sandwich. Malted bread stacked high with grilled chicken, bacon, tomato and lettuce. Cajun Pasta (v) Penne pasta in a creamy Cajun sauce.
